Water temperature (86 to 92°C/198-187°F) and pressure (8 to 9 Bars) will maintain optimum aromas extraction and give the fresh shot of espresso its consistent crowning cream, syrupy body and flavourful character.
Daily maintenance is essential to erase any thick and rancid residues which create harsh aromas and cause avoidable breakdowns.
